23 Dill Recipes, From Pickles and Potato Salad to Soup and Salmon
This pretty, fragrant herb enhances a wide variety of dishes.
Is dill a foolproof ingredient? As these dill recipes show, it pairs perfectly with potatoes and eggs, delicate fish, salmon, cucumbers, mushrooms, sour cream, and, of course, pickles. It works equally well with Central and Eastern European flavors as it does with Nordic, Mediterranean, Middle Eastern, and even Southeast Asian ones. Fresh dill is used extensively in Persian cuisine, where it’s used in the rice of meat stews, and springtime herb frittatas date back centuries. Dill also finds its way into the Russian salmon-filled pie called coulibiac, as well as Hungarian and Ukrainian cabbage dishes and Jewish comfort foods, like chicken soup with matzo balls.
Dill is considered one of the sweet herbs, along with tarragon, parsley, chervil, and chives. It’s also one of the most beautiful herbs in the garden. Its soft, wispy fronds sit atop tall stems, and as summer progresses, large, pointed heads of tiny yellow flowers burst like fireworks across the garden. When its flowers have finished blooming, the dill plant drops small, flat, brown seeds. From stem to seed, dill has many uses in the kitchen, including pickling. Fresh fronds are delicious when added to a jar of summer pickles, and the seeds can be used year-round. Use our dill recipes to celebrate this wonderful herb in all sorts of delicious ways.
