A taste for tradition and innovation
Galveston is known for its relaxed coastal atmosphere, its rich story and, of course, its seafood. However, despite its proximity to water, all Galveston restaurants are not fresh seafood from the Gulf.
In this episode of “Eat as a premises”, we bring you the first part of the Road Trip of the crew in Galveston in search of the coolest seafood in the region.
The host Chris Shepherd has decided to settle the local places that get their supplies locally and serve some of the best dishes in the city. His research led him to two essential places – one of the oldest restaurants in Houston, Gaido seafood and one of the most recent, fantasy.
Founded in 1911, Gaido’s remains a family restaurant four generations later. Chris seated with Nick Gaido to learn the story behind the restaurant and how he built a name and won a James Beard Award with his fresh Gulf seafood at the table like the American Red Vivaneau and the Oysters of Gulf Rities Rites.
Nick explains how the restaurant prospered for 114 years by remaining attached to tradition and quality while adapting to times and changing tastes. With dishes that change with fresh sockets from waters just outside the restaurant and staples like the crunch of the pacan who brings people back every year, Chris sees no reason that Gaido does not last 100 years yet.
A short trip to Gaido’s dike, Chris finds The Fancy, a one -year restaurant nestled inside the Lucine hotel. Here, Chris meets Chef Matt Sweeney who builds a menu of seasonal dishes of what he can get a source of locally. By taking its local approach a little further, Sweeney works not only with local seafood suppliers, but also one of the rare farms of the island, in Galveston sowing, to obtain the fastest product of Galveston.
With a rotary menu of seafood from the Gulf, ox raised in Texas and Galveston producer, Chris says that he will lead the 50 minutes of Montrose in Galveston just to eat here.
