Instructions:
1. Cut the cake into large cubes about 1½” wide.
2. Cut the strawberries lengthwise. This is purely aesthetic so you can see the strawberries through the glass. Keep thicker slices. (See the photo above for an example.)
3. Add the heavy cream, vanilla extract, and powdered sugar to a large bowl or stand mixer and beat on high speed for about 40 to 60 seconds until the mixture thickens. You don’t want your cream to be too thick. Stop mixing when it starts to resemble pudding.
4. Slowly fold in the whipped cream cheese until smooth and evenly combined. Pour into a large zip-top plastic bag and set aside. The bag makes it easier to prepare the piping bags.

5. When you are ready to assemble, cut the corner of your bag. Make sure the hole is big enough to easily pour the filling into.
6. Spoon ⅓ of the filling onto the bottom of your trifle. Spread evenly with a rubber spatula, making sure the cream touches the outside about 1″ thick.
7. Then add the cake cubes by hand to shape the edge of the trifle dish. Place them close together but not too tightly. Fill the center with more cake cubes. Try to choose cake cubes that are roughly the same size.
8. Using your hands, place your strawberries individually between the cake cubes, pointy side down, on the outside of the dish.
9. Then add a little over a third of your blueberries on the outside, making sure they are stacked nicely. Add cake cubes to the center to even out the layer. Gently press the cake down with your hand to keep everything compact.

10. Repeat with the cake cube layer on the outside (if not already done). Repeat with the cheesecake layer and berry layer on the outside. At this point, you should be at the edge of your trifle dish.
11. Finish your trifle with the rest of your cheesecake filling and a small pile of berries, including the blackberries in the center. Garnish with mint and serve chilled.
