Chef David Viana continues to cook on Toc

Chef David Viana made his way to another victory on the “tournament of champions” of Food Network on Sunday, March 23.
Viana, from Judy & Harry’s to Asbury Park, Lita to Aberdeen and Heirloom Kitchen in Old Bridge, entered the second episode of the Bracket style cooking competition as a series. He was against the first seeded Tobias Dorzon, a player who became NFL player who owns restaurants 1123 and Huncho House in Maryland.
The kitchen show challenges chefs to prepare a dish with ingredients, equipment and cooking style affected at random. Viana and Dorzon, who have already participated in the program, received quinoa, fennel and mussels. They needed to incorporate the entry and a cotton of milk in their cooking.
“I am a fan of TOC, I watched every season. I watched Tobias become one (n ° 1) seeds just before my eyes,” said Viana. “I really feel the pressure of the creation of flavors whose judges will remember.”
He prepared toast with the mold with coconut curry and caramelized fennel and quinoa. Dozon made fennel roasted molds in seafood broth with pancetta and fennel quinoa.
“It goes for a very high -end version of the molds,” said commentator and chef Justin Warner while Viana was tearing up the steam mussels from their shells and stirred them in his sauce. “Mussels are a food for each man when they are in the shell, but to remove them from the shell, it’s a higher level kitchen,”
Judges Marcus Samuelsson, Nancy Silverton and Charlie Palmer accepted.
“It is a dish that we need Charlie Palmer to pay the bill,” joked Samuelsson. “It’s fanciful. It’s high -end and fantasy and really elegant, and the detail is shiny.”
“Honestly, I would gladly pay the bill for this dish because I think it’s so spectacular,” said Palmer.
The judges awarded Viana Dish 91 out of 100. Dorzon received 85 points.
With the victory, Viana enters the Sweet 16 of the series. He will then cook against chef Sarah Bradley, with whom he contributed during season 16 of the “Top Chef” in Bravo.
“I am more excited and I want to cook again,” said Viana.
