Classes to teach healthy cooking offered at USA Health (ft. Sweet Potatoes with Black Beans and Cheese Recipe)

MOBILE, Ala. (WKRG) — “Food is medicine,” according to USA Health’s Integrative Health and Wellness website, but making that medicine requires cooking and a good recipe.

USA Health Internal Medicine physician Dr. Robert Israel joined WKRG News 5 to show off one of these recipes and highlight an upcoming cooking class series.

Dr. Israel showed the following recipe for Sweet Potatoes with Black Beans and Cheese, adapted from NYT Cooking and Sarah Jampel on WKRG News on 4v5.

Sweet Potatoes with Black Beans and Cheese Recipe

Serves 4 in 50 minutes or less

Ingredients:

  • 2 medium sweet potatoes, washed and halved lengthwise

  • extra virgin olive oil

  • Kosher salt to taste

  • 1 cup black beans (cooked or 15 oz can) – This totally depends on your fridge or pantry

  • ½-1 onion, julienned or diced

  • 2 tablespoons (more or less) Harissa, depending on desired level of spiciness

  • 1 cup shredded cheddar or other strong, firm cheese

  • Black pepper

Directions:

1. Heat the oven to 425 degrees and line a baking sheet with parchment paper.

2. Rub the potato halves with olive oil and place them cut side down on the pan.

3. Roast for 30 to 40 minutes until cooked through.

4. Remove from the oven, turn over and let cool.

5. Using a fork, roughly chop the flesh and flatten the potatoes slightly. Add salt and pepper.

6. Reduce oven temperature to 350 degrees.

7. Meanwhile, briefly fry the onion until translucent. Add the rinsed beans and harissa and cook for another 3 to 5 minutes.

8. Take about half of the cheese, spread it over the potatoes and alternate with a layer of beans and another layer of cheese.

9. Return to the oven for about 5 to 10 minutes so that the cheese melts.

According to Dr. Israel, the Sweet Potatoes with Black Beans and Cheese recipe works as a side or main dish and has many possible variations.

“Add slices of avocado, eggs, shredded chicken, parsley, cilantro or other herbs and even a bit of citrus to make it a main dish,” Dr. Israel said. “Pair it with other vegetables for a vegetarian meal, or serve it as an accompaniment to a salad or fish. »
