Calvin Eng’s mission has always been clear: presenting the Cantonese-American cuisine. And by many measures, he has succeeded.
When its restaurant, Bonnie’s, opened its doors in Williamsburg, Brooklyn, at the end of 2021, it has become one of the most difficult reserves to hang – and to date, it remains popular in an area that does not lack the buzzing establishments. The year that followed Bonnie after opening his doors, he was a finalist of James Beard Emerging Chef, then landed on the list of 30 less than 30 forbes the following year.
“But with the restaurant, we have an impact on so many people,” he says. His first kitchen book, Salt, sugar, msgToday, widens that reaches. “We can educate people on Cantonese cuisine and show them what it can be.”
Named from what is called “the most important trio of Cantonese cuisine”, the kitchen book is filled with fun and creative recipes that are rooted in the tradition but entirely in Ang, including the pork schnitzel with salt and pepper with the Chinese ranch, the fuyu cacio e pepe and the pie with a mild potato jar. Beyond the recipes, he is filled with anecdotes from his childhood by growing up in Bay Ridge, Odes to the characters and institutions of Chinatown, and guides to spices and kitchen tools that are fundamental for his kitchen style. It is also, as he says, “a very personal project of project family” – he wrote the book with his fiancée, Phoebe Melnick.
As for the great aspirations of the engine for the book, he hopes that “it arouses conversations on this new style of cooking of the third culture,” he said. The de-stigmatizing MSG more, which has long been part of its mission, is also an objective.
