Cooking with Beer – Raspberry Beer Cake

Party food takes on a whole new meaning when made with quality beer. And who doesn’t appreciate a freshly baked cake, especially when it’s made with your favorite beer.

And while this recipe works with a wide range of beers, we opted for Rubaeus Foundersa superb 5.7% ABV berry red Wheat Ale with an intense fresh red raspberry flavour.

This rich, moist cake combines the tones of this bright, fruity beer, available year-round, with a traditional cake base for a unique and delicious treat.

So let’s do it!

Sweet Raspberry Beer Cake

Ingredients:

  • For the cake:
    • Cooking with Beer – Sweet Raspberry Beer Cake2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1/2 cup brown sugar, packed
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup Founders Rubaeus Wheat Beer
    • 1/2 cup buttermilk
  • For the icing:
    • 1 cup powdered sugar
    • 2 tablespoons of beer
    • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat oven:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
  2. Prepare the dry ingredients:
    • In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  3. Cream the butter and sugars:
    • In a large bowl, beat together butter, granulated sugar and brown sugar until light and fluffy.
  4. Add the eggs and vanilla:
    • Add the eggs one by one, beating well after each addition.
    • Stir in vanilla extract.
  5. Mix the wet and dry ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with the beer and buttermilk. Begin and end with the dry ingredients, mixing just until well combined.
  6. Cook
    • Pour the batter into the prepared pan.
    • Bake in preheated oven for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
    • Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  7. Prepare the icing:
    • In a small bowl, whisk together powdered sugar, beer and vanilla extract until smooth.
    • Once the cake is completely cooled, drizzle the top with frosting.

Pro tips:

  • Adding a mix of fresh berries to the frosting is a great idea.
  • You can also add spices like cinnamon or nutmeg to the dough for extra flavor.
