Dailyes and Sides Substitute Chef Residency Program at Pullman Yards
They decided to go further with Brick and Mortar. The restaurant will provide space for chefs to create their own menus and run a restaurant for up to three months. Chefs Market attendees will have the opportunity to vote for their favorite food vendors. Voting has already begun and food vendors who actively participate in any of the Chefs’ Markets, including the Asian Night Market and Mercado de la Noche, are automatically entered into the competition, Rosenfelt said.
The winning entry will be chosen based on the number of votes and the viability of the concept as a full-fledged restaurant. In the case of in the event of a tie, Pullman Yards and Brick and Mortar management will make the final decision.

The first winner of the residency will be announced the third week of July and will open its doors on August 10. Voting will continue on an ongoing basis throughout the year to get a “consistent response from participants,” Rosenfelt said. Each leader will remain in residence for up to three months, with service taking place Wednesday through Sunday.
When the next leader begins his residency, the previous leader will have the opportunity to win again.
Rosenfelt hopes that including market participants in the selection process will inspire them to be invested in the outcome.
“It’s like, ‘Oh, I picked this, I can’t wait to go, I can’t wait to see what they do,'” he said.
During the residency, each chef will have a full front-of-house and back-of-house staff, as well as marketing and promotional support and a beverage program. Culinary director Alan Somphonephakdy, founder of Asian street food pop-up Salty Smiles, will develop a core menu for the restaurant that will accompany the resident chefs’ menus. Chefs do not have to pay rent and will receive a share of the sales revenue. Pullman Yards will cover other costs like ingredients.
“It’s meant to be assisted and guided,” Rosenfelt said. “But we definitely want to allow residents to express their culinary journey.”
The restaurant space will remain the same between residences, but Rosenfelt said chefs can use decorative accents to represent their cuisine.
Located at 225 Rogers St. NE, Pullman Yards is an entertainment venue that is home to seafood restaurant Fishmonger and beverage-focused AlcoHall food hall concept, and also hosts a variety of markets, rotating exhibits and of events.
Brick and Mortar will be open from 5 p.m. to 10 p.m. Wednesdays, Thursdays and Sundays and 5 p.m. to 11 p.m. Fridays through Saturdays.
