If you want an easy dessert idea to feed a crowd, make this chocolate ice cream sandwich recipe. Your guests will love this sweet treat because it will transport them back to their childhood. Squeezed between soft, gooey, and chewy cookies, the fluffy, plain vanilla ice cream takes your dessert game to the next level.

Ingredients

  • Vegetable Oil Cooking Spray

  • ½ cup all-purpose flour (plus 1 tablespoon more)

  • ¼ teaspoon kosher salt

  • ¼ teaspoon baking soda

  • 1⁄3 cup Dutch-process cocoa powder

  • 3 tablespoons unsalted butter, softened

  • ¼ cup white sugar

  • 2 tablespoons light brown sugar

  • ½ teaspoon pure vanilla extract

  • 1⁄3 cup whole milk, at room temperature

  • 6 scoops of vanilla ice cream

Preparation

  1. To make the chocolate ice cream sandwich recipe, preheat the oven to 350°F. First, line a baking sheet with a silicone mold. Then, spray the mold with cooking spray. Rub it to make sure it is completely coated.

  2. Whisk together flour, salt, baking soda and cocoa until well combined. If mixture seems lumpy or coarse, sift.

  3. In another bowl, mix the butter, sugar (white and light brown) and vanilla until smooth.

  4. Add the flour mixture to the milk. Stir until the dough is smooth and firm.

  5. Next, clean the spatula with a cookie scoop. Then, drop 12 balls of dough onto the prepared baking sheet.

  6. Bake for about nine to ten minutes in the center of the preheated oven. The tops of the cookies should not be wet or shiny at the end of baking.

  7. Remove cookies from oven. Tap pan on counter five times to settle and compress cookies. Let cookies cool to room temperature on pan (about 15 minutes).

  8. Transfer the baking sheet to the freezer, which will firm the cookies (about 15 minutes).

  9. Remove the cookies from the freezer and pan by carefully lifting the liner from underneath each one.

  10. Next, poke 10 or 12 holes in the surface of each cookie. You can use chopsticks or whatever you like. Return to the freezer until ready to assemble.

  11. When ready to assemble, remove from freezer. Flip one cookie over, place a scoop of ice cream on top, and layer with a second cookie.

  12. Serve the chocolate ice cream sandwich immediately or wrap it in plastic wrap. Then, place it in the freezer for three hours before serving. Repeat the process to make the remaining ice cream sandwiches.

The recipe may seem tedious, but trust us, it is not. You can enjoy the chocolate ice cream sandwich immediately or a few hours after assembling it. Plus, it will allow the cookies to absorb the moisture from the ice cream and become even softer.

So, make vanilla ice cream at home or save time by buying the tub of ice cream at the store. Then, immediately prepare this chocolate ice cream sandwich recipe for your friends and family. Everyone from kids to adults will love this sweet treat at your party.
