Equinox Pastries and Pops Offers ‘Bold and Trendy’ Treats

GRAND RAPIDS MI – Equinox Pastries and Pops offers custom made-to-order desserts like cake pops, decorated cookies and tasty treats in Grand Rapids.

The dessert business, owned by Rachel Baas, opened in 2019. People can rent her treat trailer for any upcoming event to elevate the dessert bar.

Baas offers a selection of desserts that customers can customize to their liking with different flavors, toppings and colors.

Baas describes her decorating style as “bold and trendy, that’s where my creative energy has been focused, so I really like to have fun with it.”

Custom decorated cookies are a popular item. Cookies are available in mini or standard sizes and start at $34 for a dozen basic mini cookies. Cookie flavor options include vanilla sugar cookie, funfetti sugar cookie, double chocolate chip cookie and snickerdoodle sugar cookie.

All regular cookies can be elaborately decorated to match the theme of an event. Mini cookies do not have the option to be detailed. Equinox Pastries and Pops requires a minimum order of one dozen cookies per order.

Another popular item is cake pops.

“It was a niche market,” Baas said. “I probably made thousands of them.”

Cake pops are available in 10 flavors, with the most popular being vanilla and chocolate. Standard cake pops cost $3 per cake pop and $3.75 per detailed cake pop. The minimum order for cake pops is two dozen.

Equinox Pastries and Pops is offering the Treat Trailer for rent, a 1968 Shasta compact camper that has been converted with a renovated interior.

When renting the Treat Trailer, an assistant is available for the duration of the event, dessert delivery and decoration complete the event. The starting rate for the rental is $450 for two hours with an additional $150 per additional hour.

Since receiving the Treat trailer, Baas has traveled to numerous flea markets to sell items, in addition to winning third place in the Michigan Women Forward WomenUp and Pitch competition in March 2023, and most recently, catering this year’s MLive Women’s Summit.

The business started in Baas’ parents’ kitchen in 2019. It has since expanded to add both the Treat Trailer in 2022 and the Mega Treat Trailer in April. Now, all of the baked goods are made in the Mega Treat Trailer, which Baas says is much more convenient. Baas hopes to eventually open a physical store in the future.

“I baked a lot for friends and family, and then word of mouth spread,” Baas said.
