The world of sandwiches has no limits. Sandwiches are enjoyed all over the world in many ways and with many fillings, such as the ham and cheese croque-monsieur from France or the gyros (pitas stuffed with lamb) from Greece. What they have in common is the use of a good protein, and who doesn’t love a chicken sandwich?

We spoke with sandwich expert Max Halley to learn more about making the perfect chicken breast sandwich. Halley is the creator of the Instagram account @lunchluncheon and the author of “Max’s World of Sandwiches,” a cookbook available on Amazon that celebrates the diversity of this lunch staple. Halley’s passion for the food also extends to his enthusiasm for a delicious chicken breast sandwich.

When you picture a dish like this, you might picture grilled or fried chicken breast in a soft bun. While these sandwiches are classics, there are plenty of other expert-approved ways to make chicken breast sandwiches. When we asked Halley what he thought was the best type of sandwich to use chicken breast in, his spirited response was, “Juicy sandwiches!!!” While chicken breast itself can be juicy (and if cooked properly, it will be), chicken breast sandwiches deserve to be loaded with juicy toppings, from sauces to condiments to broths.

Juicy toppings enhance any chicken breast

With the simple bun-filling-bun format, a chicken breast sandwich can be anything you want it to be. Take the English dish Coronation Chicken, for example. It epitomizes what juicy chicken means to Max Halley: “The Coronation Chicken is a gift to chicken breast because it’s so juicy and flavorful, and so delicious of course.”

In a Coronation Chicken Sandwich recipe, shredded chicken breast is fused with a delicious blend of mayonnaise, sour cream, curry powder, and apricots before the mixture is stuffed between slices of bread. A saucy chicken salad like this also has the potential to save a dry, overcooked chicken breast, as Halley also pointed out.

Poaching chicken is a great way to ensure a super-moist texture in a breast. Just make sure you poach your chicken correctly. One juicy tip Halley promotes is to use “a few spoonfuls of broth to loosen things up,” as well as adding her favorite topping, a “really hot mustard.” Some of the broth you used to poach the chicken will be absorbed right into the meat, and with the heat of a condiment like mustard, it can actually enhance the texture and flavor of the chicken. Use Halley’s philosophy to play around with juicy toppings, and always remember to never skip a good sauce.
