Grilled Chicken Drumsticks
- For four persons
- Preparation: 15 minutes
- Total duration: 30 minutes
Ingredients:
- 1.3 kg whole chicken drumsticks
- A tablespoon of chili powder
- A tablespoon of dark brown sugar
- A tablespoon of salt
- One and a half teaspoons of onion powder
- A teaspoon of dried thyme
- A teaspoon of black pepper
- A teaspoon of garlic powder
- A teaspoon of smoked paprika
- Half teaspoon cayenne pepper
- A tablespoon of canola oil
- Alabama white sauce, for serving
Alabama White Sauce
Ingredients:
- One and a third cups of mayonnaise
- One third cup of apple cider vinegar
- A tablespoon of Dijon mustard
- A tablespoon of Worcestershire
- Two teaspoons of granulated sugar
- One and a half teaspoons of black pepper
- A teaspoon of salt
- Three-quarters teaspoon granulated garlic, optional
Alabama White Sauce Method
In a medium bowl, whisk together mayonnaise, vinegar, mustard, Worcestershire sauce, granulated sugar, pepper, salt, and garlic powder (if using) until combined. Set aside.
Grilled Chicken Drumsticks Method
Heat a grill pan over medium heat and preheat the oven to 350°F. Pat the drumsticks dry with paper towels.
Butterfly the chicken
Using a sharp knife, use a gentle sweeping motion and cut through the meat to expose the bone. Then separate more flesh from the top of the bone, until the thigh opens up (like a butterfly).
In a small bowl, whisk together chili powder, brown sugar, salt, onion powder, thyme, black pepper, garlic powder, paprika, and cayenne until well combined. Add oil and pulse until a paste forms. Rub seasoning paste onto drumsticks.
Arrange chicken drumsticks, skin side up, on the grill pan. Cook for three to four minutes. Turn chicken over and continue grilling until skin is charred, three to four minutes.
Place the broiler in the oven and cook until the chicken is cooked through, 10 to 12 minutes more. Transfer the chicken to a platter. Let rest for five minutes and serve with the Alabama White Sauce.
