Idea Alley: The high prices of eggs do not matter for spices, eccentric cakes

The recipes that appear in IDEA Alley were not tested by the Arkansas Democra-Gazette.

The latest columns focused on eggs, or rather a lack of eggs. The best substitutes and how to cook without them. This column is no different, with two cakes that do not require eggs.

Egg -free spice cake

  • 1 cup of sugar
  • â…“ Cup or shortering helmet
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of spoons
  • 1 teaspoon of nutmeg
  • ½ cup of raisins, optional
  • 1 cup of cold water
  • 1 teaspoon of baking soda
  • ½ teaspoon of baking powder
  • 2 cups of flour

Heat the oven at 350 degrees.

In a saucepan, mix the sugar, the lank, spices, raisins and water. Bring to a boil; Boil for 3 minutes. Cool.

Add baking soda, baking powder and flour. Mix well. Pour into a 8 or 9 inch square cake pan. Cook for 30 minutes.

Another popular egg cake is a wacky cake. The exact origins of the eccentric cake are unknown, but the variations in this method have existed since the early 1900s. Similar cakes include a lamp cake, a crazy cake, a cockery cake and a hole cake in the middle, according to Food Timeline.org.

The first recipe that I was able to find in the historic archives of Arkansas newspapers was 1951.

The recipe was presented in “This week of price recipes”, a weekly feature of the Arkansas Democrat awarded $ 1 if a recipe was presented. This wacky cake was subjected by Alice shell of Pine Bluff.

The cake was mixed, cooked and served in the same dish. This recipe does not fully meet today’s recipe standards – it did not include temperature or cooking time – so I filled the gaps here.

Wacky cake

  • 1 ½ cup of flour cake
  • 1 cup of sugar
  • 3 tablespoons of cocoa powder
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt
  • 6 tablespoons of shortening or vegetable oil
  • 1 tablespoon of vinegar
  • 1 teaspoon of vanilla extract
  • 1 cup of cold water

Flour, sugar, cocoa, soda and salt in an 8 -inch square dish that is not greased. Point three holes in the mixture. In the largest hole, pour in shortening or vegetable oil; in an average hole poured into vinegar; In the smallest hole, pour vanilla. Cover with 1 cup of cold water. Mix well with the fork. Cook for 30 minutes. Frost as desired and serve.

A 1963 eccentric cake recipe recommended the next frosting.

Icing

  • 1 cup of sugar
  • 2 cocoa tablespoons
  • ÂĽ stick of margarine (or butter)
  • â…“ Milk cup
  • 1 teaspoon of vanilla extract

Mix all the ingredients and bring to a complete boil. Boil 1 minute. Pour on a cake in the pan.
