With cooler weather quickly approaching, soup season is almost here. It’s packed with such delicious flavors that you won’t find in canned versions and it even has a surprise ingredient not normally found in tomato soup – but it’s an ingredient that adds even more comfort to this warm meal.

Garten’s tomato soup recipe starts by sautéing onions in a casserole dish, then adding garlic, chicken broth, a can of crushed tomatoes, salt, pepper and a pinch of saffron for that earthy flavor . You can use an immersion blender to get that super creamy consistency, but Garten chooses to leave the soup as is to allow the distinct flavors to exist and blend together.
In another pot, cook a small portion of orzo pasta until almost cooked, then add the pasta to the soup to finish cooking.
Serve the soup with some Garten’s Grilled Cheese Croutons (which are basically pieces of grilled cheese sandwich cubes made from white bread and Gruyere – delicious), and you are ready to eat! Eat it fresh from the jar or freeze it for the chilly nights ahead.
