I made a Buffalo dressing with cottage cheese and hot sauce, filling this dish with velvety protein and fiery flavor. I totally get that people have varying degrees of heat tolerance, so rest assured, you can dial down the heat significantly (by simply omitting the cayenne) or dial it up significantly (by leaving out the cayenne and spooning extra hot sauce onto your personal plate, like I do). I also know that cottage cheese can be polarizing—I personally love it, but for the people who hate it, here’s my point: You can’t taste the cottage cheese in this mix—it’s truly undetectable. Follow my lead and add optional sliced ​​green onions and jalapeños…and for a more Buffalo wing experience, you can also add crumbled blue cheese on top.
