Julia Louis-Dreyfus says this ‘tasty’ chicken recipe is her ‘go-to’ when hosting guests (exclusive)
In PEOPLE’s latest cover interview, the Emmy-winning actress opened up about her love of being in the kitchen. When she “cooks for people”, Louis-Dreyfus says she has “a few go-to’s”. One of her favorite no-fuss recipes? Roast chicken from celebrity chef Thomas Keller.
“Thomas Keller’s Roast Chicken is amazing, and I don’t know if you’ve ever tried it, but look it up. It’s shockingly simple and absolutely delicious,” says the 62-year-old actress, who can currently be seen in the film. You hurt my feelings.
Louis-Dreyfus describes the easy process of assembling the entire dish.
“It’s a chicken that you bring to almost room temperature and dry it out so that the skin is completely dry. And then you tie it up, then you salt and pepper all over – a lot more salt than you think you need. And then you put it in the oven for whatever time, on high, I think 425 – or maybe even 450 – and just put it in there for just under an hour,” she says.

She adds: “There’s something about drying it out and then putting salt in it that makes it the fluffiest chicken you’ve ever had. I’ve done it for a lot of people who come and it’s really delicious.”
Maybe she’ll make it for legendary food writer Ruth Reichl, who was recently a guest on Louis-Dreyfus’ new hit podcast. wiser than me? The star impulsively invited Riechl to her home for a meal when their conversation was over.
“We went back and forth with each other, unfortunately, because of my schedule, and then they had challenges when they were in California, so it turns out we haven’t had this (meal),” the star said. , whose recent podcast guests include actress Jane Fonda, designer Diane von Furstenberg, and writer Amy Tan. “But it’s on our list, and I’ve sent him a sh– ton of marmalade in the meantime.” (The actress, who has orange trees at home, often offers homemade marmalade to her friends.)
