Molly Yeh’s “Fri-Tot-Ta” is the perfect breakfast to make for a crowd

When potato croquettes are in a dish, you know it’s going to be a hit. And Molly Yeh’s Fri-Tot-Ta is one of those dishes that will have your family craving more as soon as they finish the first one. Everything comes together in a braising pan (except for the croquettes, which are baked), making this breakfast dish a quick and easy brunch or breakfast dish when you’re serving a crowd.

As you probably guessed, this recipe starts by browning a few tots in the oven. Yeh suggests leaving them in for an extra 10 minutes after the package instructions to ensure they’re nice and crispy.

While the tots are cooking, heat your braising pan and cook some diced ham in the oil until it is also nice and crispy. With the ham in the braising pan, you can whisk about 10 eggs with heavy cream, grated Gruyere and Parmesan cheese, salt and pepper.

“It’s basically going to be the glue that holds the ham and the tots and all the good stuff together,” Yeh explains in a clip posted to Food Network’s Instagram page.

Add your cooked croquettes to the braising pan with the ham, then pour in the egg mixture, letting everything cook over medium-low heat so the bottom and sides can set up and gain some structure. Yeh also likes to add ricotta cheese, as well as a bit more Gruyere and Parmesan on top of the dish before transferring everything to the oven to finish cooking.

When everything is hot and cooked through, Yeh adds some chopped parsley on top and eats his with ketchup.
