You’ve probably made chocolate chip cookies for your kids (if not, that’s okay), but have you ever tried making cookies that are both fruity and chocolatey? If not, it’s time to make this recipe for white chocolate raspberry cookies. These soft and chewy cookies are packed with juicy raspberries and creamy white chocolate, making them a real treat. Kids and adults alike are sure to love this white chocolate raspberry cookie recipe.
Ingredients
-
¾ cup unsalted butter, melted
-
1 cup light brown sugar
-
¼ cup granulated sugar
-
1 large egg + 1 egg yolk
-
2 teaspoons vanilla extract
-
2 cups all-purpose flour
-
¾ teaspoon baking soda
-
½ teaspoon salt
-
1 cup white chocolate chips
-
½ cup frozen raspberries
Preparation
-
To make the white chocolate and raspberry cookies, preheat the oven to 180°C and line a baking sheet with baking paper. Set aside.
-
Combine brown sugar, melted butter, and granulated sugar in a large bowl. Mix until well combined. Then add egg yolk, whole egg, and vanilla extract and mix again.
-
Mix flour, salt and baking soda in a separate bowl.
-
Add the dry ingredients to the wet mixture until well combined. Make sure there are no traces of flour left. Then add the chocolate, but avoid overmixing.
-
Finally, stir in the frozen raspberries. Mix until evenly distributed.
-
Use a 28g cookie scoop to make round balls of dough. However, the dough may become slightly moist as the raspberries defrost, so work quickly.
-
Arrange cookies 2 inches apart on your cookie sheet and bake for about 12 minutes or until edges are golden brown. Centers should be puffed and slightly undercooked.
-
After five minutes, remove the white chocolate and raspberry biscuit from the oven and transfer it to the wire rack. Let it cool completely before enjoying.
Enjoy your delicious white chocolate raspberry cookies with your family. Remember to use only frozen raspberries, as fresh raspberries are too delicate to work with and will make a mess. However, frozen fried raspberries will dry out completely and may burn in the oven because they lack moisture.
So, get the ingredients and try this creamy and fruity white chocolate and raspberry cookies recipe for your loved ones today. If you have any leftovers (which is highly unlikely), store them in an airtight container and they will stay fresh for a few days.
