This week sparked the need to make comfort food. I admit that I was too “sorry” to make my own ravioli and use them frozen, but it was good nonetheless. “Sorry” in this context from the mountain dialect means lazy if you’re wondering.

Ravioli is a stuffed pasta that originated in Italy in the 17th century. Italians remain the largest consumers of pasta, at 23.5 kilograms per capita, although residents of Appalachia consume their share of pasta in the form of noodles usually cooked in chicken broth or in a fruit juice such as blackberry or Apple.
