Retailers discovering Fontina cheese

MILAN, July 1, 2024 /PRNewswire/ — An information trip to discover the Fontina AOP territories for GDO operators arriving from the United States was organized from From June 9 to 11.

The trip included visits to mountain pastures and places where this extraordinary cheese is produced.

The visit gave the opportunity to discover all the different stages of Fontina processing, from milking to maturation and packaging.

The milk used for manufacturing is whole or raw milk, which must be processed within hours of milking. The milk, brought to a maximum temperature of 36°C, is curdled with calf rennet.

The curd is broken until the grains reach the size of a corn kernel, then it is reheated for about half an hour until it reaches a temperature of 48°C, which stimulates the purge of the whey. At the end of this phase, it is left to rest for 10 minutes, after which it is placed in molds containing the casein marker indicating the progressive number of the product; it is then pressed for about 12 hours, being constantly turned. Before the last turn, the identification mark of the Consorzio Tutela Fontina (CTF) – Consortium for the Protection of Fontina – which also indicates the producer’s identification code, is printed on one of the flat faces of the wheel.

The cheese is then salted and matured in cool, humid natural caves for at least three months.
