Scrambled Pancakes Are the New Breakfast Staple

Pancakes seem simple to make, but we all have our preferences: you like them fluffy and lightly buttery, or you prefer them gooey and covered in warm maple syrup. No matter your preference, you always expect them to be served in a round, sweet, and tasty shape. However, TikTok has a different idea: scrambled pancakes.

Much like the spaghetti pancake craze of 2023, which saw ribbons of pancake batter piled into bowls for a pasta-like presentation, scrambled pancakes have caused quite the uproar on social media. Even @archivedchef, whose scrambled pancake tutorial has 21.2 million views and 891,000 likes (and counting), admitted she wasn’t thrilled with the results, though she waited until the very end of her video to let her fans know (in her words, “sike”). But unsurprisingly, the pancake lovers who watched her make her creation had mixed opinions.

“This got me a reaction but wait I cut them anyway so why not try this?” one person wrote in the comments. And for fans of well-done flapjacks, another said: “Oh my gosh every bite is crispy. Are you kidding me… what a genius.”

A few people mentioned that this recipe is easier to make than the pandemic-era grain pancake trend, which calls for dozens of small pancakes. However, the most insightful comments referenced the fact that these scrambled pancakes are a classic Austrian dish called Kaiserschmarrn, which translates to “imperial mess.” It is a confectionary treat that is most commonly served dusted with powdered sugar and topped with rum-soaked raisins. On Reddit, one person said, “In Slovenia, we call it Schmorn (Ĺ MORN).”

Follow this recipe to make scrambled pancakes like Austrian chefs do.

Kaiserschmarrn

Rum-soaked raisins

Use white grapes for white rum and dark grapes for dark rum.

  • Place the raisins in a clean jar and pour in the rum until they are covered.

  • Let them soak for a few hours (the longer the better), turning the jar occasionally to make sure all the raisins are covered.

Crepes

Ingredients

  • 4 eggs, separated, divided

  • 1 cup all-purpose flour

  • ½ cup milk

  • ½ cup white sugar

  • 1 pinch of salt

  • 1 tablespoon butter

  • 2 tablespoons icing sugar

Directions

  • Beat egg whites until soft peaks form.

  • Beat egg yolks in a separate bowl until smooth.

  • Mix flour, milk, sugar and salt until slightly moistened. Fold in egg whites.

  • Melt butter in a large skillet over medium heat.

  • Pour your batter into the pan and cook until golden brown. Flip it and cook for about 1 minute more until set.

  • Tear it up imperial daisy into pieces using two forks and continue cooking for about two more minutes until golden brown and cooked through.

  • Dust with icing sugar and garnish with rum-soaked raisins.
