Skillets Restaurant in Wellington is now open
For the most important meal of the day, Wellington’s new Skillets has you covered. Boasting a menu full of breakfast delights, the restaurant soft-opened in late June but officially opened on July 9.
This is the company’s 16th location and third in Palm Beach County, with one in Boca Raton opening in 2021 and another opening last year in Delray Beach.
“As we expand into Palm Beach County, the Wellington area is a great fit. This equestrian and family-friendly area has many early risers looking for a quality breakfast experience,” said Joe DiGangi, Skillets President and CEO.

Open from 7am to 2:30pm daily, Skillets offers a menu that will make most breakfast lovers think they died and went to heaven.

Blintzes, biscuits, pancakes, eggs Benedict, French toast, frittatas, fruit, grits, oatmeal, omelets, crepes, platters, scones and homemade waffles fill the menu, but it may be the restaurant’s name, the Skillet, that has people lining up.
It all starts with a base of skillet potatoes. No, these aren’t hash browns or breakfast potatoes or anything else, these are founder Ross Edlund’s tried-and-true recipe. Made with a mixture of milk, cream, cream cheese, green onions, and shredded potatoes, they’re baked in the oven until they’re perfectly golden brown.
With this tasty base cooked to order and ready to go, you have seven different skillets to choose from. These include the Avocado and Bacon Skillet, with two slices of bacon and sliced avocado; the Corned Beef Hash Skillet, made with house-made, slow-roasted corned beef brisket hash; and the Denver Skillet with ham, peppers, onions, diced tomatoes and a three-cheese blend.
All skillets include two American AA grade eggs and a choice of toast, scone or biscuit.
While breakfast gets the lion’s share of love, Skillets also offers an impressive lunch menu with items like their popular chicken tacos, made with house-roasted chicken, the avocado BLT salad, the awesome power salad, the Cuban panini, the Mediterranean wrap and so much more.
Offering equal love to breakfast and lunch lovers, Skillets serves every item on the menu from open to close. Want a Cuban panini for breakfast or a corned beef hash skillet for lunch? No problem.
Popular Skillets Lunch Menu Item: Chicken Tacos
While they have a full license to sell alcohol, DiGangi said their beverage selection doesn’t focus on “hard drinks, but purely on breakfast refreshments.” These include their Morning Mimosa and Skillets Screwdriver, both made with fresh-squeezed orange juice.
Established in Naples in 1995, Skillets was founded by husband and wife Ross and Noreen Edlund.
Originally from Chicago, the couple had moved to Naples with their family and Ross was a baker by trade.
By focusing on using only the best ingredients, making everything from scratch (no pre-made batters or sauces), and using advanced cooking techniques, from that one store the business has grown to 16 stoves, all located in Florida.
Although they are still the majority owners, the Edlunds brought in a private equity partner in 2016. DiGangi said that while the couple is now semi-retired, Noreen “does some of the decorating in the new restaurants” and Ross “still works closely with the menu and helps with marketing.”
One of the restaurant’s signature offerings is that kids 12 and under eat free on Tuesdays. DiGangi said the policy began about 15 years ago and is in effect at all locations.
