Slimming World fans have praised a breakfast recipe that tastes like cake.
Baked oatmeal is a healthy breakfast option that will keep you full until lunchtime and is easy to prepare, SurreyLive reports. Instagram foodie @cakeontherun said she was crazy about the healthy breakfast dish.
She created a new recipe that can be made in a mug in just 90 seconds. Her latest baked oatmeal recipe is super simple to make and will remind you of a delicious homemade lemon cake.

Fans wrote on her Instagram page that the recipe was “perfect” and “so good.” Made with oat porridge, yogurt and fruit, it’s a hearty, low-fat, low-calorie dish that you can also cook in the oven if you don’t have a microwave. Low in fat and calories, it is popular with Slimming World and Weight Watchers dieters.
If you have a blender, first blend your oats to the consistency of flour – this will make your breakfast even more cake-like. But if you don’t have a blender, it will still work well.
Made in a mug, the great thing about this recipe is that it can be made vegan and gluten-free with just a few modifications. Both recipes are listed below for anyone who wants to follow them for their next cake craving.
Lemon Oatmeal Recipe (serves 1)
Ingredients
- 5 tablespoons (40 g) oatmeal (mixed if possible)
- 2 tablespoons of natural yogurt of your choice + 1 additional tablespoon for serving
- 1 egg
- 1 teaspoon of sweetener
- 1 teaspoon of lemon extract
Method
- Put everything in a small cup and mix well, making sure all the oats are combined at the bottom of the cup. If you have a blender, puree the oats for a few seconds as this makes the texture more paste-like.
- Microwave on high for 90 seconds (or 20 minutes in the oven at 180C/350F/gas mark 4).
- Pour the cake onto a plate, top with additional yogurt and enjoy immediately.
Vegan and gluten-free version
Ingredients
- 5 tablespoons (40 g) gluten-free oatmeal (mixed if possible)
- 3 tablespoons of natural yogurt of your choice + additional tablespoon for serving
- 1 teaspoon of sweetener
- 1 teaspoon of lemon extract
- 1/3 teaspoon baking powder
- Squeeze the lemon juice

- Microwave on high for 90 seconds (or 20 minutes in the oven at 180C/350F/gas mark 4).
