The Best Lemon Berry Firecracker Cake Recipe for 4th of July

7 drops red gel food coloring, divided

ÂĽ cup blueberry jam

7 drops blue gel food coloring, divided

3 cups powdered sugar

2 tablespoons fresh lemon juice

Preparation

To make the lemon berry cake recipe, first preheat the oven to 350°F. Then, lightly coat a Bundt pan with cooking spray.

Next, combine the cake mix and lemon pudding mix in a large bowl. Add the eggs, oil, and 1 cup of warm water. Beat until smooth (this should take about a minute) using an electric mixer on medium to high speed.

Now, pour one cup of lemon batter into a medium bowl. Stir in the raspberry jam and five drops of red food coloring into the batter until well combined. If you want the color to be darker red, add more food coloring, one drop at a time.

Pour another cup of lemon batter into another medium bowl. Stir in the blueberry jam and five drops of blue food coloring into the batter until well combined. If you want a darker blue color, add more food coloring. However, go slowly and add one drop at a time.

First, pour your red batter. Next, pour the remaining lemon batter over the red batter. Finally, pour the blue batter into the Bundt pan.

Whisk together the icing sugar, lemon juice and 1 tablespoon of warm water in a medium bowl. Add more water, if necessary, until the mixture is smooth and has a lava-like consistency.

Pour a quarter cup of white frosting into a bowl and add two drops of red food coloring. Then, pour another quarter cup of white frosting into another bowl and add two drops of blue food coloring.

Finally, drizzle white, blue, and red frosting over the lemon berry cake. Let the frosting sit for about 30 minutes before cutting. Leave the sprinkles to your kids and let them cover the top as they like.
