The pastry chef brings joy with elaborate creations
SAUCIER, Miss. (WLOX) – A self-taught pastry chef from Saucier is turning heads with his sweet creations.
“Anyone can ride a bike, I ride mine on one wheel,” Russell Scott said.
Russell Scott’s bikes are his cakes.
“If someone calls and says, ‘I want a cake that looks like a heart,’ I say, ‘Do you want your heart to beat, do you want blood to spurt out of it, how do you want your heart to beat?’ , Scott said. .
It’s hard to tell if most of Scott’s creative creations are actually cakes. Although he never received formal training as a baker, he uses other skills in making his cakes.
“I was a mechanic in the army, so I learned how to make lights. Some of my cakes have lights, sound and smoke,” Scott said.
Scott is the cafeteria manager at Crossroads Elementary School. He will surprise students with cakes on special occasions. Surprise is always the highlight of his culinary process.
“Someone came up to me and said they were getting married on the beach during Cruisin’ the Coast and she liked rat rods,” Scott said. “I made him a cake that was a rat truck with smoke coming out of the exhaust, sound and lights. She was quite happy.
Scott’s latest sweet surprise is a tribute to the firefighters.
“They work 24/7, so I made them a cake,” Scott said.
Once the cake that resembles a fireman’s helmet was finished, Scott took it to the Saucier Fire Station in Harrison County.
“I think it’s great that the station now has a paramedic 24/7, that’s why I wanted to do this, just to say thank you,” Scott said.
“The immediate reaction is just about the details of the cake, how unique it is,” said Harrison County Fire Battalion Chief Heath Sidaway. “It’s super special for us because it’s a firefighter’s helmet. Right down to the leather strap, it is very detailed. We are very grateful that he did this.
Of course, a cake is not just for decoration. The biggest surprise comes from the taste.
“It’s bacon and maple,” Scott said.
His cakes leave an unforgettable taste and memory in whoever receives a piece.
“What I love most is seeing people’s faces when they see my cakes,” Scott said. “It makes me happy to see people’s smiles.”
