When it comes to celebrating the 4th of July, the last thing I want to do is sweat over a hot oven. Both of these recipes are refreshing, crowd-pleasing, and ridiculously easy to make in 15 minutes. I have a classic red, white and blue version, as well as a chocolatier’s dream bursting with Oreo cookie flavor – so everyone is covered. Plus, discover the secrets to a perfect creamy texture. Here’s how to make an ice cream cake.
What is an ice cream cake?
An ice cream cake is a classic no-bake dessert made with layers of cookies (or graham crackers) and whipped cream. They then cool in the refrigerator – or “cooler” – until the cookies soften to a cake-like texture. Originating from the early 20th century, this nostalgic dessert is loved for its simplicity and versatility.

How to make the best ice cream cake
Although it seems simple, making this dessert involves a few steps that go beyond the basics. So here are some secret tips to enhance your dessert.
1. Use stabilized whipped cream
To prevent the whipped cream from leaking, incorporate a stabilizer like gelatin or cream cheese. This helps maintain a firm texture even after hours in the refrigerator. You can also flavor it with vanilla extract, citrus zest, or cocoa powder to enhance the taste.
2. Choose the right cookies
Opt for thin, crispy cookies for better absorption and a more cake-like texture. And for added flavor, consider dipping them in milk or coffee before layering them. If you use thicker cookies, soak them longer.
3. Create multiple layers
Aim for at least 3-4 layers. After each layer, press gently with a spatula so that they remain compact, which will allow the cookies to better absorb the cream. You can also add a surprise layer of other ingredients like fruit jams or caramel sauce.
4. Cooling time
Refrigerate your cake for at least 4 to 6 hours, or overnight if time permits, so the cookies can soften and the flavors can blend. This is crucial for a creamy texture.
