Typically, when I make macaroni and cheese, I opt for boxed macaroni. But this recipe from i heart vegetables proved too easy to pass up. It only takes 15 minutes to make, and you can even turn it into a baking dish by transferring it to a baking dish and topping it with breadcrumbs and more cheese. I also recommend using a block of cheddar instead of pre-shredded cheddar; the latter can make for a grainy sauce.
Ingredients:

8 ounces. pasta (you can use whole wheat, chickpea or regular pasta)

½ cup white cheese, 4% milk fat

1 cup milk, 2% (whole or skimmed are also suitable)

1 tbsp. cornstarch

About 1 cup grated sharp cheddar cheese

¼ tsp salt

⅛ tsp pepper

¼ tsp garlic powder

¼ tsp paprika
Directions:

Cook pasta according to package directions.

In a blender, combine cottage cheese, milk, cornstarch, cheddar cheese and seasonings. Then blend until smooth.
