Using leftovers and forgotten frozen foods, you can create an epic dish. Here’s how.
GOOD EGGS: Got a carton of eggs in your fridge? So you’ve got a head start on brunch.
This is the starting point for a delicious stuffed omelette.
Now look in the vegetable drawer. Fry whatever you find: chopped peppers, grated carrots, slices spring onions — as well as leftover meat, fish or tofu.

Add the mixture to the middle of the cooked omelette, flip it over and finish with a little hot sauce. Sweet chili or sriracha sauce are perfect.
START THE DAY MEXICAN STYLE:This hearty brunch dish—an easy version of huevos rancheros—is perfect if you have leftover tomato pasta sauce.
Bring everything to a boil in a saucepan, diluting it a little, if necessary, with a little water. Add chili powder to spice it up.
Crack a few eggs and let the sauce boil until the eggs are cooked. Putting a lid on will speed things up.
Serve an egg and some sauce on a warm wrap, if you have one, or on any other bread if you don’t have one. Add some cheese and salad.
PEAS AND LOVE: If you have a package of frozen peas in your freezer, you’re well on your way to a tasty brunch.
All the cool kids are replacing avocado on toast with peas: it’s a shorter mileage option and just as tasty.
You can defrost the peas and blend them in a blender with olive oil, garlic and feta, then top a piece of thick toasted bread.
Or fry the peas in oil, add chopped spring onions and a little lemon juice, then mash the mixture, season with salt and pepper and add any herbs you have.
Serve on toasted bread rubbed with the cut side of a garlic clove.
