Reading inspection scores:

  • Particular attention should be paid to the type of violation (red or blue) and whether the establishment has a history of red violations or repeated violations.

  • Red violations are those most likely to cause foodborne illness and should be corrected immediately if possible or in accordance with a compliance schedule established by the health officer. Example: not storing food at the correct temperature.

  • Blue violations relate to general cleanliness and serviceability and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs to be replaced.

  • If the red dots exceed 45, the county will require a reinspection within 10 business days. A re-inspection is also required if the total of red and blue points exceeds 65.

  • If the red dots exceed 100 and there is a lack of management control, the county will close the facility for at least 72 hours. The facility may reopen after management and employees complete their retraining and demonstrate corrective actions during a reinspection.

  • Some common abbreviations: PHF/TCS means potentially hazardous food/time control for safety; RTE is ready to eat; PIC is responsible; FWC is a food sector worker card; The CDI is corrected during inspection.

  • Food contact surfaces have not been properly cleaned. Deli slicers were not cleaned every four hours.

  • TCS foods were not properly cooled. The fried chicken was cooled while covered in quantities greater than four inches. The temperature was over 41 degrees.

  • TCS foods were not kept warm inappropriately. Fried chicken in a hot deli case was less than 135 degrees.

  • TCS foods were not kept cold incorrectly. Meats packaged in a vertical glass door display were above 41 degrees.

  • Disinfectant solution was too strong as prepared.
