Halloumi and harissa toastie recipe

Halloumi does not melt as such but softens beautifully when reheated. Like all good toasts, it is best enjoyed immediately. Excellent served with a handful of chips on the side.

Ingredients

  • Olive oil, for frying
  • 100 g halloumi, cut into two thick slices
  • 2 slices of sourdough bread
  • 2 teaspoons of Harissa paste
  • 2 tablespoons of hummus
  • A handful of rocket leaves
  • Plain chips, to serve, optional

Method

  1. Heat a little oil in a non-stick pan and cook the halloumi for 2 minutes on each side until golden brown. Season with black pepper but you won’t need to add salt. Transfer the halloumi to a plate and wipe out the pan with paper towels.
  2. Spread one slice of bread with harissa and the other with hummus. Place the cooked halloumi on the harissa, then spread it over the arugula. Press remaining slice on top, hummus side down.
  3. Drizzle or brush both sides of the sandwich with a little olive oil and cook in the hot pan for 2-3 minutes on each side until crisp and golden. Serve with chips on the side.
