Ingredients

  • 100 g of plain dark chocolate (around 85% cocoa)
  • 2 teaspoons of coconut oil
  • 15 g flaked almonds, roughly chopped
  • 15 g pistachios (shelled), roughly chopped
  • 6 strawberries, washed and dried

Method

  1. Melt the chocolate in a heatproof bowl with the coconut oil in a small saucepan of boiling water. Bring to a boil, then reduce heat to simmer. Carefully place the bowl on the pot, making sure the base of the bowl does not touch the surface of the water. Let it melt slowly for about 5 minutes, stirring occasionally. You can also microwave the chocolate and coconut oil on high for 1 to 2 minutes in 30-second intervals, stirring the chocolate between each interval until it is almost completely melted.
  2. Once melted, remove the hot bowl from the pan. Incorporate the pistachios and half of the almonds into the chocolate mixture.
  3. Evenly distribute the remaining almonds in the bottom of 6 ice cube molds.
  4. Pour the chocolate mixture into the ice cube molds, then garnish each with a strawberry, stem side up.
  5. Place the molds in the refrigerator and let sit for about 2 to 3 hours or until set before serving.

He then suggested: “These treats are best enjoyed occasionally and preferably after a meal. If strawberries are not in season, any fresh berry will do. Store leftovers in an airtight container at refrigerator or in a cool, dark cupboard.”
