Savin’s Savory and Sweet Barbecue Rolls Out with Blue-Collar Flavor

Florence resident Trinity Savin commutes south five times a week to the parking lot in front of O’Reilly Auto Parts on Galvin Road to do what he does best: smoke meat.







On February 28, Trinity Savin, owner and namesake of Savin’s Savory & Sweet BBQ, stands proudly in front of her latest venture: a food truck that brings her passion for takeout cooking on the go.

“It’s been a passion of mine for 15 years. I was head chef at a barbecue restaurant in Rockbrook Village for a while,” Savin said. “The opportunity for a food truck came up and we jumped at it, so now we’re trying it.”

Savin’s Savory & Sweet BBQ is the latest addition to Bellevue’s food truck scene. The self-proclaimed “blue collar barbecue” restaurant celebrated its grand opening on Feb. 14, giving away free strawberry milkshake cookies for Valentine’s Day and unveiling a menu with a fusion of family recipes and hearty combinations.

The tradition runs deep not only in the menu, but also in the operations of the food truck, which is a family affair with Savin’s mother assisting and son Michael cooking behind the grill.

Don’t let the location of the auto parts store fool you – according to Savin, the location is prime real estate because of the place’s previous occupants, for the love of the Food Truck. The breakfast spot is moving to its first brick-and-mortar location, For the Love of Food Cafe, which Savin said will soon open in the former space occupied by American Heroes Deli.

“It was pretty well established and they had the clientele,” Savin said. “The morning shift will be coming from Offutt, so we want to incorporate a breakfast here for them as well.”

Starting Saturday, March 2, Savin’s BBQ will offer a breakfast menu, available on Saturdays only. Menu items include a breakfast quesadilla with cheese, egg and sausage stuffed inside, as well as a breakfast box containing scrambled eggs, hash browns and sausage, accompanied by orange juice and coffee.

Each entrée includes a choice of mac and cheese or baked beans and a cornbread muffin for $12-13.


SAVIN BBQ SALTY & SWEET


The lunch menu is where true flavors of the Midwest come to life, with Sunday dinner favorites like smoked baked beans, sweet cornbread muffins, creamy three-cheese mac and cheese, and pork shredded on the barbecue.

One menu item stands out from the crowd, the fan favorite, “the monster”, a 13-inch crispy grilled quesadilla with shredded cheese, mac and cheese, pulled pork, barbecued ground chicken and drizzled with sauce barbecue. This copious combination came about like many great things, out of boredom and curiosity.

“It’s crazy, we were just sitting here because we had some down time between our lunch break and our dinner. We started putting things together and this is what we came up with,” Savin said. “So we picked one up and took it to the guys at O’Reilly Autoparts and they fell in love with it.”

Savin expresses aspirations to obtain permits allowing Savin’s Savory Sweet to hit the road and be licensed for events in the Omaha metro area. He also plans to expand the menu offerings, potentially adding Philly sandwiches to the lineup soon.
