The internet calls this famous recipe “the soup”; I’m calling it my new favorite weeknight meal.

If you’re a fan of hearty soups, you’re probably constantly on the lookout for your new favorite. From bread bowl soups to chicken tortilla soup, there isn’t a single option you’ll hesitate to find the perfect bowl for you. And for those who know the viral recipe for “The Soup,” you’ve probably already found it.

Slow Cooker Chicken Tortellini Soup went viral on social media a few years ago, and it seems to resurface every soup season as people put it back into the rotation. Fans are calling the soup “extremely delicious” and are excited to share their enthusiasm for the soup with other home cooks.

Over the years, Redditors have come up with their own versions of “The Soup,” some adding bacon and mushrooms and others replacing the chicken with Italian sausage. And while it all sounded delicious, I knew I had to create the original version before making any adjustments. So, I grabbed all the necessary ingredients, pulled out my slow cooker, and got to work.

Ingredients for “the soup”

For this recipe, you will need a yellow onion, flour, dried basil, garlic, tomato paste, olive oil, chicken broth, small diced tomatoes, tortellini with fresh or frozen cheese, spinach, parmesan, heavy cream (or half and half). ), boneless skinless chicken thighs, salt and pepper.

How to prepare “the soup”

In a microwave-safe bowl, combine the onions, flour, basil, garlic, tomato paste and a little olive oil. Heat it in the microwave, stirring the mixture every 90 seconds, for about 5 minutes total. Transfer onion mixture to a slow cooker.

Add the broth, tomatoes, chicken, salt and pepper to the slow cooker and stir everything well. Cover and cook on low for 4-6 hours or on high for 3-4 hours (I chose the latter). You’ll know it’s ready when the chicken is very tender.

When the chicken is cooked, remove it from the slow cooker and shred the meat with a fork or cut into bite-sized pieces. Add the tortellini, spinach, parmesan and hot cream to the slow cooker. (It’s important to reheat the cream so it doesn’t curdle when added to the hot soup in the slow cooker.)

Return the chicken to the slow cooker, then cover and cook on high until the pasta is completely cooked, which should take about 10 minutes. Use a ladle to ladle it into bowls and dig in!

What I thought of “The Soup”

After trying “The Soup”, I can say that it was an absolute delight. This is a perfect choice for a weeknight family dinner, since you get a decent amount of servings with this recipe, and it’s very convenient. I found this to be a no-fuss dish and one that you can start prepping before you head to work, meaning dinner is well underway when you walk in the door.

As for the taste, the flavors blended perfectly, resulting in a flavorful, creamy soup and the chicken was exceptionally tender. If I had to offer a suggestion to spice up the soup even more, I would recommend adding a touch of cayenne pepper to introduce a subtle spice. Overall, this is a delicious, easy-to-prepare soup that brings a burst of flavor to the table.

Tips for preparing “soup”

Add some herbs and spices. While I added cayenne pepper to give it a little heat, you can add whatever suits your taste to amp up the flavor profile.
